Tasting Notes:
Nose: A bold medley of vanilla, toasted oak, dried ginger, and marshmallow with a perfect balance.
Palate: Distinct notes of American Oak with a slight sweetness and robust highlights of cereal and vanilla.
Finish: Effortlessly drinkable without water with a smooth lingering finish.

Michael Collins “The Prediction” Irish Whiskey pays tribute to this revolutionary hero. Made with only the finest Irish whiskeys, this dark and brooding blend of triple-distilled, pot still, grain, and malt whiskey is a rebellious and innovative contribution to the Irish whiskey category. Initially aged in a mix of bourbon, sherry and port casks for a minimum of three years and then rested for an additional 18 months in once used bourbon casks to provide its dark and brooding flavor.
Tasting Notes:
Nose: Bold caramel nose with hints of American oak giving way to fruity and floral notes.
Palate: Balanced and creamy, exhibiting slight smokiness, with cues of brown sugar, honey and banana.
Finish: A dry finish with a delicious sweetness, accented with the subtle oak overtones.
Dunvilles 1808 - 40% ABV
The name 1808 pays homage to the year Dunville’s Irish Whiskey was founded in Belfast, from where it went on to become one of the world’s most famous whiskeys. A blend of malt, grain and pot still whiskeys. Strong and uncompromised, bold and confident, charming and honest like the city of its birth.
Tasting Notes:
Nose: Initial burst of sweet vanilla leads to crisp orchard fruits, apples and pears. Then lemon curd, leading on to candied Lemon peel over notes of clean malt.
Palate: Soft and creamy mouthfeel, buttery, with ripened citrus and baked biscuit, coming together in a burst of fresh lemon meringue, followed by a wisp of char and white pepper.
Finish: Slight hints of dry smoke linger and intertwine with the juicier fruit notes, carrying through to a finish of sweet spice.
