We’re delighted to introduce our latest exclusive and limited edition Single Cask Irish Whiskey release and a new partnership with the creative team behind Two Stacks Irish Whiskey.
Two Stacks – 21-Year Old Single Grain ex-Red Ice Wine pours into the glass with a deep, rich amber/red hue reminiscent of polished mahogany. Its colour is a testament to its lengthy maturation and the influence of the rare Red Ice Wine casks from Ontario, Canada.

Nose
On the nose, this 21-year-old Cooley Distillery Irish Whiskey presents an exquisite and complex bouquet of aromas. First impressions are one of deep, sweet notes of honeyed apricots and plums, followed by hints of ripe black cherries and a touch of candied orange peel. The influence of the Red Ice Wine casks is evident, with the aromas of fresh summer fruits.
Palate
The initial sip is a harmonious balance of flavours. Rich, velvety, and full-bodied, the whiskey delivers a symphony of summer and darker fruits like strawberries and figs, interwoven with the sweetness of toffee and butterscotch.
Finish
The finish is remarkably long and elegant. It is a captivating blend of sweet and slightly dry elements, with the red wine notes intensifying and leaving a lasting impression of ripe berries and plums. A whisper of gentle spices, perhaps cinnamon and a hint of clove, lingers in the background. The whiskey concludes with a final touch of oak and a subtle, warming sensation, leaving you with a sense of contentment and a desire for another sip.
